The secret to getting juicy and perfectly seasoned meat even in the center is brining the chicken. It may take a few hours, but it is totally worth it. For the chicken brine:
Note: if you are going to use regular table salt, use 3 tablespoons and 2 1/4 teaspoons
Milk wash:
Seasoned coater:
Make the brine. In a large bowl, add all the dry ingredients and mix until well combined. Pour in the water and mix until the salt and spices are dissolved. Set it aside.
Make the milk wash. Add eggs and milk to a bowl and whisk until well combined. Set aside.
Make the seasoned coater. Sift flour or spice into a bowl, then add all the other ingredients except for the milk wash. Mix until well combined.
Remove tenderloin from the chicken breasts, then split them into 4-ounce fillets.
Place the chicken fillet in the brine for about 6 to 8 hours.
Remove the chicken from the brine and pat dry with paper towels.
Add a generous amount of oil into your pan and heat until it reaches 325F.
Spread butter on the top and bottom buns and toast over medium heat. Set aside.
Drizzle 2 tablespoons of milk wash into the flour mixture and mix until crumbly using your hands.
Dip the chicken in the milk wash, and shake off excess. Press the chicken fillet into the seasoned coater with your palm, flattening it.
Fry the chicken for at least 4 minutes. Once done frying, place it on a wire rack and allow it to cool for a couple of minutes.
Place 2 dill pickles on the bottom bun, followed by the chicken. Top with the other bun. Serve and enjoy!
