To start, drain the tuna, dice the red onion, then combine them. Next, add 1/2 tbsp lemon juice, 2 tbsp mayonnaise, some salt and ground black pepper to taste, and 1 tsp sugar (optional). Mix well and set aside. After this, slice two pieces of sourdough bread and spread butter on one side (or both if you like).

Heat your grill pan over medium heat, then brown the tuna mixture. Set aside. Next, toast the unbuttered side of the bread first, then flip. Add the tuna mixture on top of one of the sliced bread then two slices of cheese. Wait for the cheese to melt, then place the other slice of bread on top. Serve and enjoy!
