In a mixing bowl, add 8 ounces of softened cream cheese, 1/4 cup of mayo, 1/2 cup of parmesan cheese, 2 cloves of minced garlic, 1/2 teaspoon of dried basil, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. You want to whip a lot of air into this so it’s light and fluffy. Whip for about 1 to 2 minutes.
Make sure your spinach is well drained. Squeeze it to remove all water and add to the cream cheese mixture. Next, add a 14-oz can of artichoke hearts that’s been drained. Use a spatula to gently fold the spinach and artichoke hearts with the cream cheese mixture.
Transfer the mixture to a baking dish and spread it into a nice even layer and press it down into the pan. Sprinkle some shredded mozzarella cheese on top.
Place the baking dish inside the oven and bake at 350 degrees Fahrenheit for about 25 minutes.
After 25 minutes, the cheese on top should be warm, bubbly, and browned. Remove from the oven and serve with slices of crusty baguette, chips, or crackers. Enjoy!
