  • 3 Tbsp butter, divided
  • ¼ cup einkorn bread crumbs or panko
  • ½ yellow onion, diced
  • 1 clove garlic, minced
  • 2 Tbsp all-purpose flour
  • ½ tsp red pepper flakes (optional)
  • 2 cups milk
  • 2 cups sharp cheddar cheese, shredded
  • ½ cup Parmesan, grated
  • 1 tsp salt
  • ½ tsp pepper

Directions:

First, preheat the oven to 400F and butter the baking dish. Then, fill up a large pot with water and boil over high heat. Cook the cauliflower and broccoli for about 6 minutes. Strain then place the vegetables back in the original pot.
