You’ll only need a few ingredients for this recipe. It’s perfect if you’re on a budget but need to feed a large group. It’s one of my staples and it’s always a hit whenever I make this. Try it now and see for yourself!
Heat some olive oil in a large pan over medium heat, then add the chopped onion. Saute until browned. Next, cut the potatoes into large chunks and put them in a pot of salted water. Cook until tender (about 15 to 20 minutes). Back to the onions, add two cans of tuna and 2 tbsp tomato paste mixed with one ladle of potato broth. Mix well and cook for two to three minutes on low heat. Next, drain the potatoes and transfer them to a mixing bowl. Add 1 1/2 tbsp butter and some salt and black pepper, then mash. Add 3/4 cup of hot milk and continue to mash until smooth.
Now, start assembling the casserole. Add half of the mashed potato to the bottom of the casserole and spread it out nicely. Next, layer half of the tuna mixture over, followed by the remaining mashed potato, then the remaining tuna. Top it with 1/4 cup shredded parmesan, then place it in a 375 degrees F oven and bake for ten to fifteen minutes. Serve and enjoy!
