My family loves potato dishes, that’s why when I discovered this fun and unique potato recipe from 쿠킹하루 Cooking Haru 🙂 on Youtube, I knew I had to try it. Fast forward, I serve this dish almost every day now, and my family can’t get enough of it. It’s super filling with that ground beef sauce, and the texture is beyond amazing! Ingredients:

  • 2 medium potatoes, peeled and thinly sliced
  • 7 oz ground beef
  • 1 small white onion, finely diced
  • 1 small eggplant, finely chopped
  • 10 oz tomato sauce
  • mozzarella cheese, grated
  • 1/2 tbsp of minced garlic
  • 2 tbsp cooking wine
  • 1 tbsp soy sauce
  • salt and pepper, to taste

Directions:

Step 1

Peel and slice the potatoes thinly, then wash them several times to remove the starch. Next, boil some water, add 1/2 tbsp salt, and cook the potatoes for about three to five minutes. After this, remove them from the pot and wash them with cold water. Pat them dry with a paper towel and set them aside. Next, transfer the ground beef to a bowl, then add 1/2 tbsp minced garlic, 2 tbsp cooking wine, 1 tbsp of soy sauce, and ground black pepper. Mix well and set it aside. Next, dice the onion and finely chop the eggplant. Set aside as well.

Step 2

Now, heat a pan over high heat and cook the ground beef mixture. Once browned, add the chopped onion and eggplant. Adjust the heat between high and medium-high heat, ensuring that while you stir, no water is coming out of the ingredients. Once everything is cooked, add the tomato sauce and reduce the heat. Mix until well combined. (Add more tomato sauce if needed.) Simmer until the sauce thickens.

Step 3

After cooking, remove from the pan and transfer the ground beef sauce into a bowl. Then, arrange the sliced potatoes on top standing, filling the bowl in a circular form, overlapping one another (mimicking flower petals.) Brush some oil on the potatoes to make them crispy, then place them in a preheated 375 degrees F oven. Cook it for 20 to 30 minutes. After baking, remove from the oven and add grated mozzarella cheese between the potatoes (optional), then place it back in the oven for another eight to ten minutes.
