Ingredients:

  • six potatoes, boiled
  • 7 oz of cheese (gouda preferably)
  • a bunch of green onion (chopped, separate the greens and whites)
  • 3 cloves of garlic
  • salt and pepper, to taste
  • olive oil
  • 4 tbsp of fresh cream
  • fresh chives, chopped

Directions:

Step 1

Chop the green onion and chives and grate the cheese as well as the cloves of garlic. Next, heat a pan and some olive oil. Once the oil is heated, add the white part of the green onion and saute until soft. Once it becomes translucent, add the green part of the green onion. Mix well, then turn off the heat. Now, cut your boiled potatoes in half and use a spoon to scoop out the inside.

Step 2

Put the scooped-out potatoes in a bowl, then add the sauteed green onions, grated garlic, chopped chives, and salt and pepper to taste. Mix well together, then add the fresh cream and cheese. Continue mixing it until well combined. (Preheat your oven to 500 degrees F at this point). Now, spoon the filling into the potato shells, sprinkle some extra cheese, and pop them into the oven and bake them until golden brown.
