Nothing beats a good casserole dish that is both comforting and easy to make for the family, like this cheesy baked enchilada from Simply Mama Cooks on Youtube. This hearty recipe is not just easy to make – but will surely make the family ask for seconds! It’s cheesy, flavorful, and tastes absolutely amazing. This is one of my all-time favorite enchilada recipes, and I guarantee you it will be yours, too!
Put a little bit of oil in a preheated skillet and start by sauteing the onions. After the onions soften, add the ground beef, minced garlic, ground cumin, and salt. Continue cooking until the meat is browned and completely cooked. After this, set it aside and let it cool. Next, put a little bit of oil on the griddle and warm the tortilla wraps through. (Do not fry the wraps, just warm them enough.) Now, for the sauce, preheat a pan over medium heat and add 1/4 cup of oil, then add 4 tbsp all-purpose flour. Mix it and allow it to cook for 30 seconds. After 30 seconds, add the chicken bouillon cube and mix it. After the cube dissolves completely, add 2 tbsp chili powder followed by 1/4 tsp ground cumin, 1/2 tsp garlic powder, 1/2 tsp onion powder, and 2 cups of water (add the water little by little and work the sauce out until there are no lumps.)

Now, to assemble the enchiladas, add a little bit of cheese and a couple of tablespoons of the ground beef mixture. Give it a tight roll and start placing it side by side in the casserole dish. (Remember to at least save half of the shredded cheese to sprinkle over the top.) Repeat this process with all of the enchiladas. After you fill out the casserole dish with the enchiladas, sprinkle the ground beef mixture and the shredded cheese that are left over the top, then, pour over the sauce. Top it with some more shredded cheese. After this, cover the casserole dish with aluminum foil and place it in the oven at 375 degrees F for 20 minutes covered. After 20 minutes, remove the foil and continue baking for another 10 to 15 minutes or until all the cheese is all melted.
