Making it at home will save you a lot of money, plus you can customize it however you like. You can add more onions, cilantro, or sun-dried tomatoes. I promise you, it will turn out amazing! For the sauce:
Note: Do not use ripe avocados
In a large bowl, add the avocados, cilantro, red onion, and sun dried tomatoes with oil. Mix until well combined.
Fill a small bowl of water. Lay one egg roll wrap and add one large tablespoon of the stuffing into the middle near a corner. Brush the edges with water. Fold the corner first, followed by the sides, then roll. Repeat with the remaining egg roll wraps.
Add a generous amount of canola oil into a pot and heat it over medium high heat. Once hot, add the egg rolls and fry for about 15-20 seconds on each side or until golden. Transfer to a plate and let them cool down for 15 to 20 minutes.
Once they are cooled, cut them in a diagonal angle in the center.
Make the sauce by combining all the ingredients in a food processor. Blend until smooth. You can also serve it with sweet chili sauce.
