Ingredients:

Dough:

  • 2 cups bread flour
  • 1 tsp table salt
  • 1 tsp instant yeast
  • 1 cup warm water
  • vegetable oil spray

Sauce:

  • 1 (14.5 oz) can whole peeled tomatoes
  • 1 tsp extra-virgin olive oil
  • 1 garlic clove, minced
  • 1/4 tsp sugar
  • 1/4 tsp table salt
  • 1/4 tsp dried oregano
  • a pinch of red pepper flakes

Pizza:

  • 3 tbsp extra-virgin olive oil
  • 4 oz Monterey Jack cheese, shredded
  • 7 oz whole milk mozzarella cheese, shredded

Directions:

Step 1

Combine 2 cups bread flour, 1 tsp table salt, and 1 tsp instant yeast in a large mixing bowl. Stir quickly, then add 1 cup of warm water. Mix, then knead it right in the bowl. After this, transfer the dough to a greased 9″ pizza pan. Pat the dough out to a 7″ circle, then spray the top with some vegetable oil spray. Cover the pan with plastic wrap, then refrigerate it between 12 to 24 hours. After refrigerating the dough, remove it from the fridge and let it rest for 30 minutes at room temperature. Now, grease a cast-iron pan with 3 tbsp extra-virgin olive oil, then transfer the dough onto it. Put the piece of plastic right back on top and let it sit at room temperature for 1 1/2 hours. In the meantime, make the sauce.

Step 2

Break out the juices from a can of whole peeled tomatoes, pressing the tomatoes hard on a sieve to get all the juices. Transfer it to your food processor once done. Next, add one clove of minced garlic, 1 tsp extra-virgin olive oil, 1/4 tsp table salt, 1/4 tsp sugar, 1/4 tsp dried oregano, and a pinch of red pepper flakes. Put on the lid, process the sauce until nice and smooth, then transfer it to a mixing bowl.

Step 3

Start assembling the pizza. Add 1/2 cup of the sauce over the pizza and spread it until half an inch from the edges. Next, create a wall around the perimeter using the shredded Monterey Jack cheese, then press it onto the edges of the pan to create a half-inch tall cheese wall. After this, sprinkle 7 oz shredded mozzarella cheese over the sauce. Place it in a 400 degrees F oven for 25 to 30 minutes. After baking, let it cool down for three minutes, then run a butter knife around the edge of the pan. Then, gently remove it using a thin spatula, and serve.
