Ingredients:

  • 8 oz beer (warmed to 90-90 F)
  • 3 & 1/3 tsp instant yeast
  • 1 & 1/4 tbsp granulated sugar
  • 1 & 1/4 tbsp olive oil
  • 1 & 1/2 tsp salt
  • 2 & 1/4 cup bread flour

For the sauce:

  • 28 oz can of crushed tomatoes
  • 7 tbsp tomato paste
  • 1 & 2/3 tbsp granulated sugar
  • 2 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • pinch of chili flakes

For the toppings:

  • 1/2 lb full-fat mozzarella (shredded)
  • pepperoni

Directions:

Step 2

Put the warmed-up beer in a medium bowl, then add 3 & 1/3 tsp of instant yeast, 1 & 1/4 tsp granulated sugar, 1 & 1/4 tbsp olive oil, and 1 & 1/2 tsp salt. Stir everything well to combine, then add 2 & 1/4 cup of bread flour. Stir everything well. Once it turns into dough consistency, knead it. Cover the bowl and let it ferment for 15 minutes. After 15 minutes, take off the cover and fold over, and rotate the dough. Repeat this four times and finish it off by rounding and tucking the dough into a nice tight ball. Put the cover back and ferment for another 15 minutes. After 15 minutes, grab your cast-iron pan and spray a generous amount of cooking oil on it and place your dough with the seam side facing up. Now, push the dough outwards to fill the pan, then cover the pan with a lid and let it rest for 10 minutes. At this point, go ahead and preheat your oven to 550 degrees F.

Step 2

Combine 28 oz can crushed tomatoes, 7 tbsp tomato paste, 1 & 2/3 tbsp granulated sugar, 2 tsp salt, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp dried oregano, 1 tsp dried basil, and a pinch of chili flakes. Blend these all together until the herbs are well broken down and everything. (30 seconds or so.) After this, get 4 to 5 spoonfuls of sauce (or you can go heavier if you like) and spread this evenly to the pizza dough. Then, sprinkle the shredded mozzarella cheese and place the pepperoni slices on top. Let the pizza rest for 10 to 15 more minutes, then place in the preheated oven and bake for 16 to 18 minutes.
