Ingredients:

  • 8 oz uncooked orecchiette
  • 2 cups of cherry tomatoes
  • 8 oz diced mozzarella
  • lots of freshly chopped basil and parsley
  • a pinch of fresh (or dried) oregano

For the Dressing:

  • 1/4 cup extra virgin olive oil
  • 1 1/2 tbsp balsamic
  • 1 tbsp lemon juice
  • 1 clove of grated garlic
  • salt, to taste

Directions:

Step 1

To start, cook the orecchiette pasta til al dente, then set aside. Next, combine 1 clove of grated garlic, 1/4 cup extra virgin olive oil, 1 1/2 tbsp balsamic, 1 tbsp lemon juice, and salt to taste in a large bowl and mix together until combined.
