Ingredients:

  • ½ – 1 pound large shrimp, peeled and deveined
  • ½ cup mayonnaise
  • ¼ cup sriracha
  • ¼ cup sweet Thai chili sauce
  • 1-2 tsp soy sauce
  • 1½-2 cups corn starch
  • 2 beaten eggs
  • 2 tbsp heavy cream or half and half
  • Corn starch
  • Salt
  • Pepper
  • Onion powder

Step 1

Prepare your sauce in a large mixing bowl by combining the mayonnaise, sriracha, and sweet chili, taste and adjust the spice if preferred, then add in the soy sauce, give them a good mix until uniform and incorporated. Make sure that your shrimp are defrosted if you’re using frozen, then soak them in buttermilk or eggs and the heavy cream mixture for a few minutes. Prepare your corn starch and season it with salt, pepper, and onion powder to taste. Dredge the soaked shrimp one by one evenly, then place them on a plate to rest.

Step 2

Place a cast-iron skillet pan or frying pan on a stove over medium-high heat, then fill the pan up to about half an inch of cooking oil. Carefully place the shrimps and cook them for about 1½ to 2 minutes, then flip and cook the other side for another 2 minutes or so. Carefully and regularly remove the shrimp around in the oil to avoid them from sticking to each other or to the bottom of the pan. Once the shrimps are golden brown and cooked through, transfer them to a plate lined with paper towels to drain off excess grease. Coat the shrimps in the prepared sauce, then transfer them to a serving bowl, and garnish them with diced green onion.
