Ingredients

Base and topping:

  • 14.10 oz of lotus biscuits
  • 2/3 cup of salted butter (melted)

Filling:

  • 1 3/4 cups of double cream (cold)
  • 1 can (14 oz) condensed milk
  • 5.3 oz of Biscoff spread (room temperature)

Instructions

Step 1:

Add the lotus biscuits to a food processor and crush them finely. If you don’t have one, you can place them in a zip lock bag, remove the air from the bag, and close it. Crush them finely using a rolling pin. Transfer to a mixing bowl.

Step 2:

Add the melted salted butter to the crushed biscuits. Mix until well combined.

Step 3:

Line a 8″ x 8″ tin or 9″ x 9″ tin with parchment paper. Make sure to cover the sides too.

Step 4:

Transfer half of the mixture into the lined tin and spread evenly. Press down firmly with the back of the spoon, especially the corners.

Step 5:

In a different mixing bowl, add 1 3/4 cups of cold cream, 14 oz of cold condensed milk, and 5.3 oz of Biscoff spread. Whisk everything until thick and creamy.

Step 6:

Pour the filling into the base. Spread it out with a spoon and smoothen the top.

Step 7:

Sprinkle the remaining crushed biscuits to the top. Spread and press down gently.

Step 8:

Place in the fridge and freeze for about 6 hours.

Step 9:

After six hours, remove it from the tin and slice it into 16 squares. Serve and enjoy!
