This is probably the best zucchini carrot fritters you’ll ever try – it’s crispy, flavorful, and very easy to make. Not only that, it’s also nutritious and budget-friendly! Place the grated zucchini in a bowl lined with a cloth, then sprinkle salt over it. Add the grated carrots on top of the grated zucchini. Cover them with the cloth, and squeeze out the liquid as much as you can. Transfer to a bowl.
Add 2 eggs to the carrots and zucchini, followed by 2 eggs, 1 teaspoon of salt, 1/4 cup of parmesan cheese, finely chopped green onions, 1/3 cup of breadcrumbs, 1/4 cup of all-purpose flour, 3 tablespoons of fresh parsley, 3 tablespoons of chopped dill, and freshly ground black pepper. Mix everything until well combined.
Place a pan over medium heat and add olive oil. Once hot, scoop the mixture using an ice cream scoop, then add to the pan. Make sure not to overcrowd the pan. Flatten it with the back of the spoon. Cook for about 3 minutes or until golden and crispy on the bottom. Flip and cook the other side for 3 minutes more. Transfer to a plate lined with paper towel to remove excess oil.
Serve with Greek sauce. Enjoy!
