Start by thoroughly washing the papaya. Remove all the dirt from the skin. Slice it in half and remove the seeds with a spoon.
With the skin on, grate the papaya. You can also place it in the food processor to make the grating process easier. The skin is very important so make sure not to peel it.
Place the meat in a bowl, then add the grated papaya. Mix it well and cover with a cling wrap. Leave it for about three or four hours. Do not leave it for a longer period. The optimal temperature is 140F. Do not place it on your fridge or in a hot or very cold environment as it will not work.
