Ingredients:

  • 4 large dark-skinned sweet potatoes, peeled and cubed
  • 1/2 cup white sugar
  • 2 large eggs, beaten
  • 1/2 tsp salt
  • 4 tbsp softened butter
  • 1/2 cup milk
  • 1/2 tsp vanilla extract

Pecan Streusel Topping:

  • 1/2 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 3 tbsp softened butter
  • 1/2 cup chopped pecans

Directions:

Step 1

Preheat your oven to 325 degrees F. Next, peel your sweet potatoes and cube them roughly. Transfer them to a saucepan and cover them with water. Boil for 15 minutes or until the potato cubes become tender. In the meantime, prepare the other components of the casserole.

Step 2

Combine 1/2 cup white sugar, two large eggs, 1/2 cup of milk, 4 tbsp of softened butter, 1/2 tsp salt, and 1/2 tsp vanilla extract in a large mixing bowl and mix everything well. Back to the sweet potatoes, drain them once tender, and transfer them to the butter mixture. Mix everything using an electric mixer until the texture is nice and smooth. Once done, transfer the mixture to a greased casserole dish, spreading it evenly.

Step 3

To make the streusel topping, combine 1/2 cup of packed brown sugar, 1/3 cup of all-purpose flour, and 3 tbsp softened salted butter. Mash the butter and mix them all until crumbly. Lastly, stir in 1/2 cup chopped pecans. Sprinkle it over the casserole dish evenly. Pop it in the preheated oven and bake for 30 minutes. Serve it nice and hot!
