Add 4 cups of water to a large saucepan, followed by 2 tablespoons of old bay seasoning. Mix, then place over medium-high heat. Let it come to a simmer.
In a large bowl, add 1/3 cup of mayo, zest of 1 lemon, and 1/2 teaspoon of old bay seasoning. Mix until well combined.
Add the diced celery to the mixture and mix well.
Once the water is simmering, add the shrimp. Cook until the shrimp is pink. Make sure not to overcook it. Drain the shrimp and let it cool for a while. Once cool enough to handle, peel the shell of each shrimp. Chop into bite-size pieces.
Add the sliced shrimp into the mayo mixture and mix until well combined. Transfer to a container and place the lid. Let it chill for 6 hours before serving.
