I have already made this several times for dinner because it comes easily and tastes so good. You will just need simple ingredients to make this recipe, such as onion, tomato soup, garlic, salt, black pepper, Italian seasoning, cheese, and cottage cheese. For the carbs, you will be using egg noodles. They are slightly salty and savory compared to regular pasta, which is perfect for this recipe. Start by preheating your oven to 350F, then greasing a 9 x 13 baking dish.
Fill a large pot with water and let it come to a boil. Add 1/2 tablespoon of salt and the egg noodles. Cook according to package instructions. Once done, drain and place the noodle back into the pot.
Mix in the cottage cheese and sour cream to the drained noodles, then set aside.
Place a large skillet over medium high heat and add the ground beef. Cook until browned. Drain the grease, then add the onion. Cook until softened.
Add the tomato soup, water, garlic, Italian seasoning, salt, and pepper. Stir until well combined. Let it simmer for about 5 minutes, then remove from heat.
Add the noodle mixture in the bottom of the prepared baking dish and spread evenly. Sprinkle half of the shredded cheese over the noodle mixture. Next, add the meat mixture. then top with the remaining cheese.
Place in the preheated oven and bake for 20 minutes until the cheese has melted and it is golden brown on top. Serve and enjoy!
