Smash the sausage into a cooled skillet. Sprinkle a little bit of avocado oil and turn the heat on. Let it cook for about 4 to 5 minutes before mixing. Sear the meat. Once browned, add the onions and cook until softened. Add sazon, cumin, chili powder, and smoked paprika. Mix well.
Preheat the oven to 375F.
In a 9 x 11 deep casserole dish, add the small pieces of Velveeta cheese, Rotel tomatoes, shredded cheeses, meat and onion mixture, and the juice of chipotle in adobo.
Place in the preheated oven and bake for 25 to 30 minutes or until everything is melted. Stir it every 10 minutes. During the second stir, it should be easier to stir. Mix in the milk.
While waiting, cut the corn tortillas into quarters, and fry them at 350F oil for a minute or two. Place on a cooling rack to remove excess oil, then season with salt.
Garnish with more tomatoes and parsley. Serve with the tortilla chips. Enjoy!
