Everyone has their version of roasted potatoes, but this one from Spice Bangla on Youtube is guaranteed the best-roasted potatoes recipe out there. It’s crispy and the herbs and spices used were just right and not too overpowering. What’s more, it doesn’t matter if you don’t own an oven; you can also pan-roast the potatoes to perfection. Ingredients:

  • 2 1/5 lb (1 kg) potatoes
  • 1 tbsp of salt
  • 4 tbsp olive oil
  • 1 tbsp minced garlic
  • 1 tbsp chopped fresh rosemary
  • 1/2 tsp black pepper
  • 1/2 tsp red chili powder (optional)
  • 2 tbsp chopped coriander (for garnish)

Directions:

Step 1

Chopped the potatoes in halves. Next, boil water in a pot and add 1 tbsp salt to it. Add the potatoes and boil them for 10 minutes. After this, get three cloves of garlic and mince it (1 tbsp). Get some fresh rosemary and chopped it finely (1 tbsp). Place a pan on medium heat, then add 4 tbsp of olive oil. Add the minced garlic and chopped rosemary. Fry them until slightly brown. Strain the oil into the boiled potatoes, then sprinkle some salt followed by 1/2 tsp black pepper, and 1/2 tsp red chili powder (optional). Mix them well to combine. Put the potatoes in a baking tray lined with parchment paper. Place them in the oven and bake for 60 minutes at 400 degrees F. (Flip the potatoes after 30 minutes.)

Step 2

Alternatively, you can also pan-roast the potatoes. In a medium-heat pan, use the same infused oil (rosemary and garlic). Add the potatoes and fry them for about fifteen to twenty minutes until crispy. Flip them over every five minutes. Transfer both the oven and pan-roasted potatoes to a plate or bowl and garnish with some freshly chopped coriander.
