Meatloaf glaze:
Make sure the vegetables and the mushrooms are finely chopped.
Place a pan over heat and add butter. Once melted, add the mushrooms and cover with the lid. Let it cook down for a bit before stirring in the onion, shallot, and a bit of salt. Cook until the onion is soft and smells sweet.
Add the garlic, bell pepper, and cajun seasoning. Mix and cook for a few minutes. Once done cooking, let it cool for a bit.
In a large bowl, add the ground beef, saltine crackers, milk, egg, egg yolk, Dijon mustard, ketchup, and Worcestershire sauce. When the veggies are cooled, add to the meat mixture. Mix everything with your hands.
Line a baking sheet with foil. Form the mixture into a loaf shape and place it in the fridge to firm it a little bit.
Make the glaze. In a different bowl, mix ketchup, dijon mustard, maple syrup, and Worcestershire sauce. Slather it all over your meatloaf. Let it chill in the fridge while your oven preheats at 375F.
Once your oven is ready, bake the meatloaf until it’s cooked in the center for about 45 to 55 minutes.
Once done baking, let it rest for a few minutes before slicing.
