Who can resist these popular grocery store cookies? Now, you can make them at home with this copycat recipe. I have to admit, these might be the best homemade Lofthouse cookies I have ever tried! Thanks to Preppy Kitchen for this awesome recipe. They have this soft, cakey texture and a sweet, buttery taste that is seriously good! It even melts in your mouth.

As we all know, Lofthouse cookies are pink. To replicate that exact look, you will need food coloring but you can also leave it out if you want. These cookies are very easy to make, and most of the ingredients are probably already in your pantry. If you are wondering why they’re so soft, it’s because of the baking soda, baking powder, and sour cream! These treats are so addicting, especially the buttercream frosting on top.
For the buttercream:

Start by combining flour, salt, baking powder, baking soda, and cornstarch in a mixing bowl. Whisk them together then set aside.
Add butter and sugar in a bowl and cream until fluffy. Next, beat in the egg, vanilla, and almond extract (if using). Mix in the sour cream until combined. Scrape down the side of the bowl if needed.
Add the dry mixture to the wet mixture and mix on low speed until just combined. Scrape down the sides of the bowl using a spatula and combine any flour that is not mixing well. Once you have the dough, shape it into a disk then cover with cling wrap. Chill it for an hour.
Preheat your oven to 375F. Roll the dough using a rolling pin until it’s 1/4″ thick then use a 2 1/2 to 3 inch circular cookie cutter to cut the cookies. Reroll the scraps and cut again. Place them in baking sheets lined with parchment paper and bake at 375F for about 8 to 9 minutes or until the cookies are turning color on the bottom edge. Set aside and allow to cool completely.
While baking, cream the butter then combined the powdered sugar and vanilla. While mixing on low speed, drizzle in the milk then increase speed to high and beat until its smooth. If you are going to add food dye, mix in a drop one at a time until desired color is reached.
Once the cookies are cooled, spread a thin layer of buttercream on top, then add sprinkles.
