Everyone loves fried rice – it’s cheap, easy to make, and delicious. It will always be my go-to meal whenever I’m hungry and want something that is filling and tasty. Try this restaurant-quality fried rice recipe by Epicurious at home, and I’m sure you’ll agree that it’s the best one you have ever made.

Transfer the leftover rice to a baking sheet and separate them into an even layer. Place in the fridge and let dehydrate overnight.
Oil your hands and try to separate each grain. Do not put it back in the fridge as you want it to bring it to room temperature.
Place a wok over heat and some oil. Make sure that the entire surface is covered with oil. Once the oil is smoking, take it off the heat and let it cool down for a second, then put the eggs and immediately stir fast. Right before it’s fully cooked, transfer it to a bowl and set aside.
Put the wok back into the pan. Add oil and spread to cover the surface. Once hot, add the shrimp and season it with salt. Cook until just orange and pink color, then remove from heat.
Turn the heat to high. You want your wok to be really hot. Add more oil and spread evenly. Add the chopped onion and season with a little bit of salt. Cook until the color changes to light yellow. Next, add the rice and put the onion on top of the rice. Try to utilize the entire surface area of the wok by pushing the rice to the sides. Cook until you hear the rice popping and it’s slightly browned, then mix.
Add the shrimp and eggs. Mix well with the rice. Make sure to separate any clumps. Season with black pepper and pour a little bit of soy sauce onto the side of the wok. Turn off the heat and mix the scallions.
