Bring a pot of water to a boil with four pcs. guajillo peppers. Once it starts to boil, turn off the heat and let it steep until the peppers soften. After this, transfer the softened peppers to your blender along with 1 cup of the steeping liquid, 2 tbsp chopped chipotle pepper, 2 tsp ground cumin, a pinch of dried oregano leaves, 1 1/2 tbsp beef bouillon powder, 1/4 cup light chili powder, 1 tbsp smoked paprika, 2 tbsp dark brown sugar, 1/4 cup masa harina, 3 to 4 cloves of roughly chopped garlic, 1 tbsp Maggi seasoning sauce, and 1 tbsp apple cider vinegar. Blend these all together (add 1 cup of water if the mixture becomes too thick).

Next, cut the chuck roast into small cubes and saute them in a large pan until browned. Once done, transfer the meat into the crockpot. Saute the ground beef as well and transfer it into the crockpot. After this, saute the diced onions in the same pan, then pour a 12 fl oz bottle of dark lager beer. Bring the beer to a simmer, then transfer it to the crockpot. Now, pour the puree you blended earlier along with 1 cup of beef stock. Season with salt and ground black pepper (season according to your preference). Mix everything well. Put the lid on, set the crockpot to high, and cook it for four to five hours (or low for six to eight hours).
