Ingredients:

  • 2 medium russet potatoes
  • 1/4 tsp onion powder
  • 2 tbsp light olive oil (or bacon grease, divided)
  • 2 tbsp butter, divided
  • fine sea salt, to taste
  • freshly ground black pepper, to taste

Directions:

Step 1

To start, peel your potatoes and grate them right into the bowl using the large holes of a box grater. Once you have grated all your potatoes, squeeze out all the excess liquid. Transfer the drained potatoes to a mixing bowl and sprinkle 1/2 tsp of onion powder. Mix well. Preheat a 10″ cast iron skillet over medium heat, then add 1 tbsp of oil or bacon fat and 1 tbsp of butter.

Step 2

Once the butter melts, add your potatoes, spreading them into an even layer (about 1/3 inch thick). Let the potatoes saute without stirring for six minutes over medium heat or until the bottom of the potatoes is browned and crisped. Before flipping the potatoes, season them with salt and ground black pepper to taste. After flipping, drizzle 1 tbsp of oil or bacon fat around the edges of the hash browns and dot the edges with butter. Season the top with a little more salt and pepper to taste and let it cook for another six minutes.
