I was looking for a warm and fulfilling meal to cook last night and found this dish by Polinas gesunde Rezepte. Add some vegetable oil and chopped onions to a pan. Saute until soft and translucent. Next, add the diced carrots. Mix and cook for a few minutes.
Place the diced potatoes in a large pot along with the sauteed onions and carrots. Pour 0.26 gallons of water and mix. Place the pot over heat and season with salt and pepper. Stir well. Place the lid on the pot and let it cook for about 15 minutes.
While waiting, remove the skin from the salmon and cut it into cubes. Next, slice the broccoli florets and tomato into small pieces.
Add the broccoli, salmon, and tomato to the soup and mix well. Place the lid and cook for about 5 minutes.
Add 3 and 1/2 cups of cream to the soup and stir until well combined. Chop the fresh parsley, then add for garnish. Let it cook for a few minutes, then turn off the heat. Serve in different bowls. Enjoy while hot!
