This recipe is adapted from the Jordan Marsh Department Store blueberry muffin recipe. Trust me, no one can top this one! It is packed with blueberry flavor and is quite addicting. You will surely can’t get enough of this muffin once you try it. Everyone in your family will love it – may it be the kids or adults. If you are not going to serve them right away, you can store them in an air-tight container.
Start by preheating your oven to 375F and lining a muffin tin with paper lines. Next, lightly grease paper lines with nonstick cooking spray.
In a large mixing bowl, add the butter and sugar. Cream for about 2 minutes using a hand mixer.
Add the eggs and beat until well combined. Next, mix in the baking powder, salt, and vanilla.
Mix in half of the flour using a hand mixer until just combined, then add in half of the milk. Make sure to scrape the bottom and sides of the bowl. Next, add the remaining flour and milk, mixing after every addition.
Gently fold the blueberries into the batter using a rubber spatula.
Divide the batter evenly amongst the 12 muffin cups, then sprinkle 1 teaspoon of sugar on top of each muffin.
Place inside the preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean.
Once done baking, let the muffins cool for about 5 minutes in the pan before removing them. Transfer to a wire rack to cool completely.
