Place the beans in a large pot and fill it with enough water. Bring it to a boil. Once boiling, turn off the heat and drain the water.
Pour another 0.53 gallons of water into the beans. Add 1 chili pepper and 4 pieces of bay leaf, then cover with the lid. Cook it for 120 minutes.
While the beans are cooking, dice the 3 onions. Add 5 tablespoons of oil and diced onions to a pan. Cook for about 5 minutes. Dice the celery and add to the onions. Let it cook for about 6 minutes. Next, add 1 tablespoon of tomato paste and mix until well combined.
Remove the chili and bay leaves from the beans and transfer the water into a bowl. Add 1 tablespoon of salt, 1 teaspoon of coriander, 6 minced garlic cloves, and 1/3 teaspoon of black pepper. Stir well and set aside.
Mash 1/3 of the beans, then pour the sauce back. Mix until well combined. Next, transfer it to the onions and celery. Add a bit of water if it’s too thick, then stir. Place the lid and cook for another 7 minutes. Add the chopped parsley and serve in bowls. Enjoy!
