Level up your breakfast with this berry baked oatmeal casserole from Downshiftology on Youtube! I always love oats during breakfast, and this recipe is one of my favorite ways of having them. Preheat your oven to 375 degrees F and grease your baking dish. In a bowl, combine 2 cups of old-fashioned rolled oats, 3/4 cup of sliced almonds, 1 tsp ground cinnamon, 1/2 tsp baking soda, and 1/2 tsp kosher salt. Mix them well together, then set them aside. In another mixing bowl, combine 1 & 3/4 cups milk, 1/4 cup honey, two large eggs, 2 tbsp of melted butter, and 2 tsp vanilla extract. Whisk together until the mixture is lightly frothy, then combine it with the dry mixture.

Once you combined the dry and wet mixture, add 2 & 1/2 cups of frozen mixed berries and fold the mixture gently. Now, pour the berries mixture into the prepared baking dish and spread them evenly. You can top it with some more berries and sliced almonds, totally optional. Put the baking dish in the oven and bake for 40 to 45 minutes or until it’s set.
