Chop the veggies accordingly and set them aside. Next, cut the beef into thin slices and marinate with 1 tsp soy sauce, 1/2 tsp dark soy sauce, 1 1/2 tsp oyster sauce, 1 tsp sugar, 1 tsp baking soda, 4 tsp cornstarch, 1/8 tsp black pepper, and 6 tsp water. Mix well, making sure the beef is properly coated, then stir in 4 tsp oil.
Heat some oil in a large pan over medium-high heat and stir fry the chopped green onion and sliced onion. Season with 1/8 tsp sugar and 1/8 tsp salt. Give them a few toss, then remove from the pan. Add a little more oil, then stir fry the mushroom until softened. Season with 1/8 tsp sugar, 1/8 tsp salt, and 1 tsp rice wine. Remove from the pan. Next, add some oil again and stir fry the beef until brown. Add the minced garlic, 1 tsp rice wine, 1 tsp dark soy sauce, 1 1/2 tsp oyster sauce, and 1/2 tsp sugar. Keep stirring until combined, then add 1/3 cup water. Once the sauce has thickened up, add the cooked onion, green onion, and mushroom. Mix until combined, then remove from the pan. Serve and enjoy!
