If you’re looking for a dish to serve for Mexican night, I recommend these ground beef and cheese enchiladas from Catherine’s Plates on Youtube. This is one of the best enchilada recipes I’ve ever tasted, and it’s a staple in our house. My family truly loves this recipe, and I always have clean plates whenever I serve this for dinner. Ingredients:

  • 2 tbsp of butter
  • 2 tbsp of all-purpose flour
  • 20 oz can + 1 cup of red enchilada sauce
  • 2 cups of chicken broth
  • salt and pepper, to taste
  • 1 1/2 lb of ground beef
  • 4 oz can of diced green chilis
  • 1 onion, diced
  • 10 – 14 tortillas (corn or white flour)
  • green onion, sliced for garnish
  • cilantro, chopped for garnish
  • pico, for garnish
  • 2 – 3 cups of shredded cheddar cheese

Directions:

Step 1

To start preheat your oven to 350 degrees F. Next, in a saucepan over medium heat, add 2 tbsp of butter. Once melted, add 2 tbsp of all-purpose flour and whisk together for a minute. Next, add a 20 oz can of red enchilada sauce, then season with salt and pepper to taste. Bump the heat to high and bring everything to a boil, stirring occasionally. Once boiling, remove it from the heat.

Step 2

Next, heat a skillet over medium-high heat and add 1 tbsp of oil and the diced onion. Saute for four to five minutes until soft. Next, add the ground beef. Season with salt and pepper to taste, then cook the beef until browned. After this, add 1 cup of red enchilada sauce and 4 oz can of diced green chilis. Mix everything well. (Heat up your tortillas at this point.)

Step 3

Now, start assembling everything. Place some of your sauce on your casserole dish, making sure the whole bottom is coated until halfway up to the sides. Next, dip the heated tortillas in the sauce, place it on a plate, then put 2 tbsp of the meat mixture in the center. Sprinkle some cheddar cheese on top, then roll it up. Place it, seam side down, into the casserole dish. Repeat these steps until you finish your meat mixture. Once the casserole dish is filled, pour some of the sauce over the top and sprinkle some more shredded cheddar cheese. Place it in the preheated oven and bake for 20 minutes. After this baking, garnish the top with chopped green onions, chopped cilantro, and pico. Serve and enjoy!
