This classic one-pot soup is comforting, with lots of veggies and herbs to compliment. This recipe is also perfect for a cold, busy weeknight when you just want to warm up the whole family. Ingredients:
- 1 cup chopped yellow onions
- 2 cloves of minced garlic
- 1/8 cup olive oil
- 1/2 tsp dried oregano
- 1 & 1/2 tsp kosher salt
- 1 tsp freshly ground black pepper
- 2 cups medium diced carrots (3 – 4 carrots)
- 1 cup medium dices red boiling potatoes, unpeeled
- 1 lb dried split green peas
- 8 cups chicken stock (or water)
Directions:
Step 1
Add 2 tbsp olive oil to a saucepan followed by chopped onion and minced garlic. Mix to combine. Next, add 1 & 1/2 tsp of kosher salt, 1 tsp of pepper, and 1/2 tsp of dried oregano. Stir around and let the onion and garlic cook. After this, add the diced carrots, diced red potatoes, 8 cups of chicken stock, and 1/2 cup of dried split peas. Let it simmer for 40 minutes.

Halfway through the cooking, add another half a cup of dried split peas and continue to let the soup simmer.
