I always make this whenever we have a little too many bananas. It’s a staple recipe in my kitchen and my family enjoys this with a scoop of vanilla ice cream or some whipped cream. Banana Filling:
Crumble Topping:
In a large pan, add 2 tbsp butter, 1/2 cup brown sugar, and 1/2 tsp cinnamon. Stir until melted and combined. Once melted, simmer on low heat for one to two minutes, then stir in 2 tbsp maple syrup. Remove from heat and set aside. Next, chop the bananas into 1″ slices, then add them to the brown sugar mixture. Place on the stovetop and gently mix until the bananas are evenly coated. Remove from heat and transfer the bananas into an 8″ x 8″ baking dish. Set aside.
In another mixing bowl, add 1/4 cup butter, 1/2 cup brown sugar, and 3/4 cup gluten-free flour. Mix using your hands until crumbly texture. After this, stir in 3/4 cup of pecans. Sprinkle it over the bananas, covering the entire surface. Place it in a 350 degrees F oven and bake for 24 to 25 minutes. Serve with some vanilla ice cream.
