In a mixing jug, combine 3/4 cup + 2 tbsp milk and 3/4 tbsp vinegar. Mix well and set aside for ten minutes. Next, combine 2 + 3/4 cups all-purpose flour, 3/4 cup caster sugar, 1/2 tsp baking soda, 2 + 1/2 tsp baking powder, 3/4 cups chocolate chips, and a pinch of salt in a large mixing bowl. Set aside. For the wet mixture, add three eggs to the milk mixture earlier, followed by 1/3 cup vegetable oil, and 3 tbsp unsalted butter. Whisk until well combined. Once done, gradually add the mixture to the dry mixture, along with 1 +1/2 tsp vanilla extract (do not overmix.) Cover the bowl with plastic wrap and place it in the fridge while you preheat the oven to 425 degrees F (about 15 minutes.)

In the meantime, line your muffin tray with cupcake liners. Once the time is up, divide the mixture into each muffin cup. Sprinkle some extra chocolate chips on top. After this, place the muffins in the preheated oven and bake for five minutes, then lower the temperature to 400 degrees F and continue baking for 13 minutes. After baking, cool the muffins slightly before taking them out of the muffin tray.
