Ingredients:

  • 8 oz dried cavatappi pasta (or any pasta of choice), cooked
  • 2 pints cherry tomatoes
  • 8 oz block of feta cheese
  • 1/2 cup extra virgin olive oil
  • 1/4 tsp sea salt
  • 1/4 tsp ground black pepper
  • 2 garlic cloves, minced
  • 1/4 cup packed chopped fresh basil (plus more for serving)
  • goat cheese (optional)
  • honey (optional)

Directions:

Step 1

Transfer 2 pints of cherry to your casserole dish, then add 1/2 cup of olive oil. Season with 1/4 tsp sea salt and 1/4 tsp ground black pepper and give everything a good toss. Next, add the block of feta cheese in the middle of the casserole dish, then add a little bit more olive oil and ground black pepper. Place it in the oven at 400 degrees F for 35 minutes.

Step 2

Once done baking, remove from the oven and add 1/4 cup packed chopped fresh basil and two cloves of minced garlic. Now, mix it all together, crushing the tomatoes in the process. After this, add the cooked pasta and toss everything nicely. Garnish with some more basil, then serve.
