Bacon Egg Toast Cups

These bacon egg toast cups by Everyday Food are a breakfast staple at our house. Everyone loves them so much because they are filling and delicious. The bread is buttery and perfect with the crispy bacon and baked egg. It’s very simple to make and won’t even take more than 30 minutes to prepare! This is great for breakfast, lunch, or even dinner on a busy day.

Ingredients:

• 3 tablespoons of unsalted butter (melted)
• 8 slices white or whole-wheat sandwich bread
• 6 slices bacon
• 6 large eggs
• coarse salt and ground pepper

Instructions:

Step 1:

Get one of the bread slices and press down using your hands to make it a little bit flatter so it’s thin enough when you put them in the muffin tin. You can use a rolling pin to make it even.

Step 2:

Fry the bacon slices in a pan until it’s not quite crisp as you are still going to cook them in the oven. Once cooked, remove from the pan and place on a plate lined with a paper towel to remove excess oil.

Step 3:

Using a four-inch round cutter, cut your flattened bread slices. Next, cut them in half.

Step 4:

Brush your muffin tins with unsalted melted butter. Take 2 of your halves of bread and a line a cup of a muffin tin – the round edges up. If there’s a hole in the bottom, you can cover it with extra pieces of bread. Do the same with the other cups.

Step 5:

Brush the bread with melted butter.

Step 6:

Take a slice of the bacon and place it in one cup. Repeat with the others.

Step 7:

Crack one egg on each cup.

Step 8:

Place the muffin tray on a baking sheet and season them with salt and pepper.

Step 9:

Place it inside the oven and bake at 375F for 20 minutes until the egg white is set.
