For the chili spices:

In a large cast iron skillet, cook the bacon until lightly crisp. Remove the bacon and place it on a plate lined with a paper towel to remove excess grease.
In the same skillet with the bacon grease, saute the vegetables for about 5 minutes until they become tender. Once done, remove the vegetables from the skillet and drain as much bacon grease as possible. Next, cook the ground beef one pound at a time in the skillet to allow them to brown. Break the ground beef into pieces. Once they are cooked through, remove them from the skillet.
Mix all of the spices in a small bowl.
In your slow cooker, mix the beef consomme or beef stock with the tomato paste. Stir in the Worcestershire sauce and spices. Taste the mixture and adjust the spices to your liking. Add the cans of tomatoes and beans, all undrained. Next, add the beef and sauteed vegetables. Chop the bacon into 1/2 inch pieces then add to the crockpot. Place the lid and cook on low for about 6 hours.
