I recently went to Mexico and had the chance to try their elote. It was my first time trying it and got surprised by the flavors. The spices with the cheese and mayonnaise were incredibly good. That’s why the first thing I did when I got back home was search for recipes, and luckily found this authentic Mexican street corn recipe by Smokin’ & Grillin with AB. Note: you can use hot sauce or Rich’s river dirt instead of the chili powder

Cook your corn and let it cool until you can handle it with your hands. Cut the bottom and top.
Insert the skewers into each of your corn.
On a large plate, add your two cups of cojita cheese and scatter. Add the melted butter and mayo into two separate bowls.
Get one corn and brush it with melted butter. Be sure to brush every nook and cranny. After the butter, grab a spatula and cover the whole corn. This brings outstanding flavor with the sweetness of the corn and acts as a binder to hold the cheese on top.
Coat it with the cojita cheese all the way around, then dust it with chili powder. Repeat with the remaining corn.
Serve the corn on a plate and enjoy it with your family and friends!
