To start, make the candied walnuts. Melt 1 tbsp salted butter in a pan, then add 1/4 cup white sugar. Mix well until caramelized, then toss a cup of walnuts. Mix well, making sure the walnuts are fully coated. Once done, spread it to a baking tray lined with parchment paper. Let it cool. Next, soak the cranberries in hot water for ten minutes, then drain. After this, core and slice the apple thinly, and squeeze a lemon over to prevent browning.

For the dressing, combine 4 tbsp olive oil, 2 tbsp cider vinegar, 1 1/2 tsp Dijon mustard, 1 1/2 tsp white sugar, 1/2 tsp salt, and 1/4 tsp ground black pepper. Now, assemble the salad. In a large bowl, add the mixed salad leaves, half of the sliced apples, and all the red onion, then drizzle half of the dressing. Toss it well. Next, add the soaked cranberries, candied walnuts, the rest of the sliced apples, and feta cheese. Drizzle the rest of the dressing. Serve.
