The apples definitely elevated the flavors of the pancakes. Everyone at home loved it. It was gone in just a few seconds!

The batter uses the same ingredients as your usual pancake batter – egg, butter, milk, flour, baking powder, and salt. The only difference is the cinnamon and vanilla extract. I wish I had known this recipe sooner. It’s definitely a fun twist to your daily breakfast. You can serve it with whipped cream, ice cream, syrup, powdered sugar, or homemade applesauce.

For the batter:
Start by peeling the apple, removing the core using an apple corer, and slicing it into 2 cm thick rings. If you don’t have an apple corer, slice it first, then use a teaspoon to cut out the core. Place them in a medium bowl.
Sprinkle 1/2 teaspoon of cinnamon on the apple rings and toss to coat.
In a large bowl, add egg, butter, vanilla extract, and milk. Whisk until well combined.
Sift flour, baking powder, cinnamon, and salt directly over the wet ingredients. Mix until well combined. It is fine to leave lumps.
Place a pan over medium heat and melt the butter. Dunk an apple ring into the batter, then place it on the pan. Cook until bubbles form, then flip it over and cook the other side. Once browned, transfer to a plate. Repeat with the remaining apple rings.
Stack apple ring pancakes then top with your favorite toppings and drizzle your preferred syrup. Serve and enjoy!
