Ingredients:

For the apple filling

  • 2 tbsp freshly squeezed lemon juice (approximately 30 mL)
  • three pounds of applesHoney Crisp, Golden Delicious, Cortland, or Mitsu
  • 2/3 cup sugar plus more for sprinkling on the pie.
  • 1/4 cup of unsalted butter
  • 1/4 teaspoon cinnamon powder
  • 1 nutmeg pinch

For the dough

  • 300g unbleached all-purpose flour
  • 1 pound granulated sugar
  • 2 tbsp freshly squeezed lemon juice (approximately 30 mL)
  • three pounds of apples (Honey Crisp, Golden Delicious, Cortland, or Mitsu)
  • 2/3 cup sugar plus more for sprinkling on the pie.
  • 1/4 cup of unsalted butter
  • 1/4 teaspoon cinnamon powder
  • 1 nutmeg pinch

Egg wash

  • 1 egg
  • 1 tablespoon heavy cream

To make the caramel

  • 2 tbsp freshly squeezed lemon juice (approximately 30 mL)

  • 2/3 cup sugar plus more for sprinkling on the pie.
  • 1/4 cup of unsalted butter
  • 1/4 teaspoon cinnamon powder
  • 1 nutmeg pinch

Directions:

In the food processor bowl, combine 300g all-purpose flour, 14 cup granulated sugar, 12 teaspoon salt, and spices. Attach the mixture to the food processor and mix it up nicely. Mix in 1/4 cup unsalted cold butter and 4 tablespoons cold water. Flip the mixture onto the pastry mat and knead it with your hands just for the dough to come together a bit. Place the dough in a plastic bag and place it in the fridge for half an hour or overnight.

Peel and slice the apples into bite-sized pieces. Dump them into a bowl, squeeze in lemon juice, 2/3 cup granulated sugar, a pinch of nutmeg, and 12 tsp of ground cinnamon.  Toss in the ingredients to distribute them evenly.

In a medium-high heated pan, add 4 tbsp of unsalted butter and cook the apple mixture until the sugar melts. Cover the pan and let it cook for 10 minutes on medium-low heat.

For the filling, combine all the ingredients in a medium-low heated pot. Whisk as it cooks for 7-8 minutes until you notice the caramel thickening. Remove it from the heat, transfer it to a bowl, and set it aside.

Strain the apples in a colander over a bowl to catch all the juices.  Give the colander a good shake to get as much juice as possible. Pour the juice back into the pan and let it simmer over medium-high heat until it thickens and becomes lightly caramelized.  Toss the caramelized juice together with the apples to evenly coat them and set them aside to cool completely.

Sprinkle some flour on your pastry mat and place it on the dough. Check for cracks and pinch them back together. Then, sprinkle on another layer of flour. Use a circle cookie cutter to cut the cookie crusts and place them on a baking sheet.

For the strips, cut them using a knife guided by a ruler. With your egg wash mix, brush it on the pastry circles to serve as glue. Add a nice glob of caramel to the center of your pastry circles. Spread it out. Add 1 12 tbsp apple pie filling to the caramel. Then, layer on the pastry strips.

Brush with egg wash and layer on the second layer of strips.  Use the cookie cutter to remove the excess strips and brush on a final layer of egg wash. Sprinkle on some sugar.  Repeat the process with the other cookies.

When finished, place it in the oven to bake for about 20 minutes at 375F until nice and golden brown.
