It’s apple season and the apples are flooding into the grocery stores and farmer’s markets, but the thing I love more than apples is the taste of oatmeal with apples, so I made an Apple Oatmeal Cake with fresh apples and it turned out so delicious. This cake has fresh seasonal apples in a combination of melted butter and brown sugar topping a rich, buttery, delicate bundt cake. You can add rum or your favorite liquor to the cake to really give it a kick, it’s so yummy! It’s not hard at all and the ingredients are very basic.

Ingredients:
6 large apples
2-3 Tbsp lemon juice
1 1/4 cups rolled oats
1 2/3 cups all-purpose flour
150g butter (cold)
3/4 cup sugar (plus 1 Tbsp for topping)
1 tsp cinnamon
Directions:
First, preheat oven to 360 degrees and then line a 9-inch springform pan with parchment paper and grease with butter. Then in a large mixing bowl, mix flour, oats, cinnamon, and sugar and set aside.
In a separate bowl, then grate peeled apples and mix them with fresh lemon juice and set aside.
For the first cake layer: grate 2 TBSP cold butter on the bottom of the pan, sprinkle 3 to 4 Tbsp of the oat mixture, then lightly press. Evenly spread 1/3 of the shredded apples with the juice. repeat that process 2 more times. Then finely grate the remaining cold butter on top of the cake then sprinkle with the 1 Tbsp sugar.
Bake for 35 to 40 minutes, until golden brown on top and let cool for 20 minutes, release from the pan and let cool completely.
This cake is really amazing, I highly recommend it.
