This recipe only requires simple pantry ingredients. To make the homemade crust, you need all-purpose flour, salt, sugar, butter, and water. For the filling, you need apples, butter, sugar, cinnamon, nutmeg, cornstarch, and egg. If you have a ton of fresh apples, this is one of the best recipes to make with them. For the crust:
For the filling:
Start by making the dough. In a food processor, mix the flour, salt, and sugar. Add the cubed butter, then blend the dough until the crumbs form.
Add the water and stir until well incorporated.
Cover the dough with a plastic wrap and place in the refrigerator. Refrigerate for an hour.
While waiting for the dough, make the filling. Peel and chop the apples.
In a small heavy-bottomed saucepan, add the butter. Once melted, add chopped apples, sugar, cinnamon, and nutmeg. Mix, the cook over medium heat until the apples are tender for about 8 to 10 minutes. Once done, remove it from the heat, and add the cornstarch. Stir to combine then set aside to cool.
Assembly. Start by preheating the oven to 375F.
Flour your working surface, then place the dough. Roll it out until it is 1/8″ thick. Using a round cutter, cut out 4-inch circles.
Place 1 to 2 tablespoons of the apple mixture in the center of the circles. Brush the edges with beaten egg and fold the dough over the filling. Using a fork, seal the edges. Place in the refrigerator for about 20 to 30 minutes.
Brush the pies with egg wash. Using a pairing knife, cut a few small slits on top of each hand pie. Sprinkle sugar on top if preferred.
Place inside the preheated oven and bake for 20 to 25 minutes or until golden brown. Once done baking, allow the pies to cool slightly before serving.
