These amazing hot chocolate cookies by Preppy Kitchen with a warm cup of coffee are the perfect treat in this cold weather. They are soft, chewy, and gooey – truly irresistible! Everyone in my family loves these, especially the kids. They said it was the best cookies they ever tasted and that I should bake more next time. Preheat the oven to 375 Fahrenheit then line two baking sheets with parchment paper.
Add flour, cocoa mix, salt, baking powder, and baking soda in a medium bowl and whisk until well combined.
Get a large bowl or the bowl of a stand mixer with the paddle attachment. Add the butter and sugar and beat on medium speed until light and fluffy for about 3 minutes. Next, add the egg and vanilla then beat until well combined. Make to scrape down the bowl. Add the flour mixture and put the speed to low. Mix until just combined. Lastly, add the chocolate chips.
Scoop the dough into balls using a 1 1/2 tablespoon scoop then place them on the baking sheets. Spacing them 2 inches apart.
Place 1 sheet in the oven and bake for about 9 minutes. Remove the cookies from the oven and add half of a marshmallow in the center of each cookie. Place them back in the oven and bake for another 2 minutes. Once done, let it cool for a few minutes on the baking sheet and then transfer it to a wire rack to cool completely. Enjoy!
