This chicken stuffed baked potato recipe by Home Cooking Adventure on YouTube is a healthy meal or side dish for those that love potatoes. Also, I would eat this as a meal or cut them in pieces and have them as a snack for pre-game days with some company over. I think they would taste amazing with ranch dressing, and they remind me of loaded baked potato wedges. I love how there’s chicken mixed with the interior of the potatoes together too. You can add all types of seasonings and spices. I think the melted cheese on top of the potatoes finishes it off well.

Ingredients:

  • 4 medium potatoes
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red pepper, chopped
  • 1/2 chicken breast, cut into small pieces
  • 1 tbsp olive oil
  • Fresh parsley
  • 1 cup grated cheese
  • Salt and freshly ground black pepper, to taste
  • ½ tsp nutmeg, optional

Directions:

First, preheat the oven to 450F and put the potatoes with olive oil in the oven for 40-45 minutes. Prepare for the filling by heating a large skillet with butter or oil over medium-high heat. Saute the onions with garlic for about 5 minutes until soft. Add the red pepper and chicken and cook until the meat is cooked through. Next, scoop out the insides of the potatoes and mix them with the chicken filling mixture. Fill the potato shells with the chicken potato mixture and sprinkle cheese on top. Bake for 10-15 minutes or until golden brown.
