This nourishing and flavorful soup recipe by Preppy Kitchen on YouTube will surely bring you comfort instantly and you won’t want to stop taking a bite until it’s all gone! This is a great soup to serve to kids or picky eaters as it’s very healthy and yummy and they wouldn’t even mind that it’s made up of butternut squash.

In fact, this might even become their new favorite soup and they’d never want butternut squash served any other way. What’s even better about this recipe is that the ingredients that you will need are all very simple and most of them might already be available in your kitchen, but feel free to swap and modify them according to your preference.
Step 1
Place a large pot on a stove over medium-high heat, then add the onion, and keep cooking them for about 15 minutes while stirring occasionally until they start to brown.
Step 2
Reduce the heat to medium, then stir in the garlic cloves, and cook for an additional 2 minutes. Add the cinnamon and nutmeg, then give them a good stir, and cook them for a minute while stirring continuously until fragrant and nutty smelling.
Step 3
Now, add the squash along with some salt and pepper, then pour in the vegetable broth, and give them a good stir making sure to scrape any browned bits at the bottom of the plot.
Step 4
Bring the soup to a simmer for about 30 to 40 minutes until the squash is very tender making sure to stir occasionally, then remove it from the heat, and carefully transfer the soup to a blender or a large mixing bowl.
Step 5
If not using a blender, get a stick blender instead, then emulsify the soup until smooth and silky puree, and then pour it back into the pot. Adjust the consistency as needed and the seasoning to taste, then serve, and enjoy!
