These melt-in-your-mouth cookies by Preppy Kitchen are perfectly spiced with cinnamon, cloves, and ginger and coated with sugar for the perfect balance of flavors. Make these cookies this Christmas and serve them with rum balls, chocolate balls, and gingerbread cookies.
In a medium bowl, sift flour, baking soda, salt, and spices. Whisk, then set aside.
In a large mixing bowl, add softened butter, brown sugar, and molasses. Beat on medium speed until light and fluffy for about 3 minutes using a hand mixer. Alternatively, you can use a hand mixer fitted with a paddle attachment.
Beat in the egg and vanilla. Scrape down the sides of the bowl, then mix again until well combined.
Turn the mixer on low speed, then add the flour mixture. Mix until just combined. Scrape down the sides again, then fold the remaining flour. Cover it with cling wrap and let the dough chill for at least an hour.
Once the dough is ready, preheat your oven to 350F, then line a large baking pan with parchment paper.
Using a small ice cream scoop or tablespoon, scoop out the dough and form into a 1 1/2 to 2-inch ball. Roll in the granulated sugar, then place on the prepared baking sheet. Repeat with the remaining dough. Place them about two inches apart.
Place in the preheated oven and bake for 12 to 14 minutes. The centers should be soft. Let them cool completely on the pans. You can store the cookies in an air-tight container for up to a week.
