Last week, I made this for a family gathering, and everyone couldn’t stop raving about how delicious it was. The pot was empty in just a few minutes! You can never go wrong with this dish, especially in cold weather. Serve it with dinner rolls, mashed potatoes, or crusty bread.
Add the stewing beef in a bowl. Season with salt and pepper, then add flour. Mix until well-coated.
Place a large pot over heat and add olive oil. Once hot, add the coated beef in a single layer. Work in batches. Make sure not to overcrowd the pot. Let them cook until browned, then flip and cook the other side. Transfer to a bowl.
In the same pot, add the chopped carrots, celery, and onion. Cook until the vegetables are soft, stirring occasionally. Add the garlic, oregano, and tomato paste. Mix well. Cook until fragrant.
Deglaze the pot with a bit of beef broth first, then pour the remaining. Bring back the seared beef, then pour water. Season with salt and pepper. Mix well. Bring it to a boil. Once boiling, lower the heat and cover the pot. Cook until the beef becomes tender.
Add the barley. Mix, then cover. Cook for another 30 minutes or until cooked through. Stir occasionally. Garnish with parsley and serve. Enjoy!
