For egg wash:
For topping:
In a small bowl, add yeast and 1 tablespoon of sugar. Whisk to combine. Add 3 tablespoons of warm water and whisk again. Set aside for 5 minutes.
In a microwave-safe medium bowl, add milk and butter and microwave for 1 minute, or until milk is warm and butter is just melted.
In a large bowl, add four, 1 to 4 tablespoons of sugar, and salt. Whisk until well combined. Add milk, butter, egg, and yeast mixture. Using a wooden spoon, stir the mixture until dough forms. Add in a stand mixer with the hook attachment on or on a lightly floured surface until the dough is smooth for about 6 to 8 minutes.
Transfer the dough into a lightly oiled bowl, turning it around to coat. Cover the bowl with a plastic wrap. Place in a warm place and let it rise until doubled in size for about 1 to 2 hours.
Line a baking sheet with parchment paper. Remove the cling wrap, then punch down the dough to remove the air. Bring it together into a ball, then divide the dough into 16 balls. Place them side by side, lightly touching, into four rows of four. Cover the dough balls loosely with plastic wrap. Place on a warm spot for about 45 minutes.
Preheat your oven to 375F. Make the egg wash. In a small bowl, whisk one egg and 2 teaspoons of water. Strain the egg water mixture to discard stringy pieces. Brush the top of the rolls with egg wash. Place in the preheated oven and bake until the rolls are puffed and golden for about 20 to 25 minutes. Sprinkle flakey sea salt on top if preferred. Serve while warm. Enjoy!
